recently I read in a ff-mag the following thoughts about this topic:

All in all the tip/spear of a barbless hook is much slimmer as for a barbed hook (simply because the barb makes the 'thickest' part in the spear.
Therefore a barbless hock penetrates much easier in a fish's mouth or jaws, which are quite hard.
Additionally, if the barb did not really penetrate deep into the jaws, during the fight it tends to increase the size of the hole, which was made while the spear penetrates the fish's mouth. sometimes the hole gets big enough, so that the hook gets loose.

I fish both types of hooks, did not really saw a difference.

I don't know the principle of it, but 90 to 95% of my flies are tied barbless.  I don't have any problem landing fish, and the hook doesn't seem to slip back out any easier than with barbed hooks.
