When interviewing people for use in mass media, it is best to get a signed release.  If you are interviewing many people at a public fair or something, it is easiest to have a release form with several lines for several people to sign it.  I have found that people will sign a long form more readily if there is a signature or two on it already.

One also needs a "site release" for the interior or a store, etc.  Someone from Japan posted here about some places demanding fees for use of their property but this seems to be rare.  However, sometimes the person on location is hesitant to sign because they are an employee and don't have the proper authority.

Another "trick" I've seen MTV and others using when filming in a venue which was technically public (a public park in Staten Island) at a public event (a Gay Pride Fair) where some people might have concerns about being videotaped was to post "public notices" on trees and by all entrances announcing : "Warning: You May Be Videotaped"...with the details "by MTV for use in..."

If you post such notices at a location where you are filming, be sure to take video showing the notices were posted.

The nice thing about vlogging is you get to bypass all of this.
