Not instructional videos, but there are currently a lot of veterinary "reality" TV shows, on National Geographic channels and Animal Planet. They show veterinarians doing surgery, setting bones, getting tar off eagles, castrating yaks, etc. (My husband has become fascinated with them, esp. the Yukon Vet, I think.)
You may need a subscription to watch online, and the descriptions of episodes are vague ("...and a grey wolf goes under the knife") but possibly there are blogs or discussion lists where the contents are more carefully analyzed.
