As others have mentioned, put

  set linebreak

in your ~/.vimrc which, can be done from the command-prompt with

  echo set linebreak >> ~/.vimrc

I'm finding h, j, k, l; e, b; $, 0; and H, M, L a bit limited

While Tim Gray mentioned mappings for gj/gk, I also notice your list omits the f/F/t/T/;/, motions as well as the sentence "(" and ")" motions. I use the fFtT;, motions *ALL* the time, to the point where I almost never use h/l to move horizontally. For prose (rather than code), the parens are useful for jumping sentence-wise. Additionally the w/W/b/B/e/E motions will speed up your horizontal movement.

Finally, can I specify a default font? If so, how do I
determine what fonts are available?

For now I'm using MacVim for now

I don't know the particulars of MacVim, but if it's running in a console, you're at the mercy of your console-font; if you're running in a GUI, you can tweak the 'guifont' setting. The easiest way is to

  :set guifont=*

to bring up your font registry for picking various fonts. Fiddle around until you find a combination you like and then issue

  :set guifont?

to see what the value is now set to. Then add a line to your ~/.gvimrc of that form such as

  set guifont=Monaco:h10

in the same way as above for adding something to your .vimrc
