This is probably because the SE/30 has Color QuickDraw in its ROM.
IIRC, the Classic does not.

There was a grayscale card for the SE/30 that would output grayscale
to the internal CRT, but it's extremely expensive ... it's the Micron
Xceed card. I always wanted one :)
