System 7 can be resource heavy on 68000 based Macs. Unless there's some feature of System 7 that you absolutely can't live without, I'd run 6 on a 68000 based Mac. There are plenty of cheap Macs that you can buy that will run 7 without slowing down so if 7 is a major part of your computing life, I'd get one of those.
