I think Apple Desktop or GEOS for Apple would've became the dominant OS by the early 1990s, also with a variety of // GS type of computers, similar to what had occurred in our actual reality.
The void was there in the fates and the void needed to be filled. Commodore wasn't up to the task, but Amiga and Atari ST were, and NeXT was sort of there, but just out of reach. Consider this, that if the // GS line resembled the Macs were have in our reality, then the PowerPC still would've happened, just under the // format and would still be PPC CPUs. Then Apple still would've bought NeXT, and while something iMac like would've been released, Jobs would still have pushed for NeXTSTEP to become the next Apple OS, so I think in the end, we would've ended right back to where we are now.
