I think they are greyscale.

That's a 13W3 connector and there are adaptors
available to connect to the normal Mac video out.

Mostly print media like newspapers and magazines.
Graphic designers used them for layout and design.
They were also used in Computer Aided Drafting.
Color proofing used to be done by specialists so
the layout people didn't need color, they just
needed HUGE SIZE for precision. You also didn't need
color if your print jobs weren't done in color.

Might check around and see if there are any clubs
nearby that might want a dirt cheap setup to spiff
up their newsletter. A vintage Mac plus a two-page
and an old LaserWriter work just as well as they
did 10 years or more ago! :)
