The gestures are very intuitive; it takes a minimal amount of practice. I recommend reading the section in the Iphone book you got that describes them. There's a setting in the Voiceover section of Settings (Settings, General, Accessibility, Voiceover) that enables Voiceover practice, so you can practice the gestures. A "double tap" is jus what it sounds like: you take one finger (or two in certain circumstances) and uickly tap the phone screen twice. That's how you open anapp or a menu. Flicking right or left involves taking your finger and brushing it to the right or left 9or up or down) the screen, kind of like you are wiping a crumbs off a tablecloth. Hope this helps. I was very worried about the gestures too, but they are easy to learn and Voiceover is very helpful in its verbal cues.
