Go to Settings > Mail, Calendar, Contacts double tap on the mail account you want to change, after you swipe past the items you can select or unselect to sync (Mail, Contacts, Calendar, Reminders) you will find "Mail Days to Sync", double tap on it. Select either No limit, 1 day, 3 days, 1 week, 2 weeks or 1 months. I have mine set to "No Limit" so that all messages are displayed. The setting you mention doesn't exist any more, but this will dow hat you want.
