Place two fingers on the screen, a little ways apart, and rotate them to the right or left, until you reach adjust value. Then flick up or down to adjust the value. Up goes higher, and down goes lower. If you find your having trouble with this gesture, you might want to go practice it in the VoiceOver practice area of settings. You get to that by going to Settings/General/Accessibility/VoiceOver/voiceover practice.
