This is not correct, you can get through the welcome screens of Aipoly and use 
the app just fine without ever disabling Voiceover.
You just do a right to left 3-finger swipe to move through the welcome screens, 
the last swipe when you are on the fifth welcome screen will take you to the 
main screen of the app. You can now double tap the Toggle Aipoly button to 
start and point the iPhone at objects you want to recognize. You may have to 
touch the screen once at the beginning somewhere in the middle to hear the 
result, once focus is on that result/area of the screen it will read 
automatically as you point elsewhere.
