I don't have a complete list of which features are not available, but I believe the 3GS also does not get the new phone features like answering a call with a predefined text message if you can't take the call, Do Not Disturb etc. I also think the VIP Mailbox is not available on the 3GS and there are a few more. Apple really does want people to upgrade especially those with a 3GS.
