I haven't been paying attention to this thread, so I apologize if I'm
repeating anything.
If you don't have a bluetooth keyboard paired with your phone then the
virtual keyboard should just appear when you double tap on an entry
field. Note that some bluetooth keyboards have a button that will let
you bring up the virtual keyboard even when the bluetooth keyboard is
paired with the phone.
Once you have the virtual keyboard on the phone, to start dictating,
just double tap the dictate button which you'll find to the left of the
space bar. When done dictating, just perform a double tap with two fingers.

When you're using a keyboard, the phone keyboard is hidden and you won't be
able to get to the dictate button with the physical keyboard.
So the method of double tapping to start and stop as described is the only
option.

Do the old-fashioned dictation mode. First of all with one finger
double tap on the edit screen. Then do a two finger double tap to get
into the dictation mode dictate your message anyway that you want I
always liked and sends us with.
When you're done do another two finger double tap and that will and
dictation.
