For text selection to work, the text from which you are wanting to select must be editable. If it is, edit also will appear in the rotor. If you don't have edit in your rotor, add it, then see if it is there for the email from which you are wanting to select text. For emails, sometimes it is there, sometimes not. If edit does not appear, there are two ways to try to make it appear. I will describe the hard way first, being that it might also work in other situations, then the easy way that will work for an email, but no other place. When you are in the text from which you want to select, do the old pinch gesture, by placing two fingers parallel on the screen, with space between them, then bring them together in a pinch gesture. Your fingers must be absolutely straight in relation to the screen, and you must pinch them together absolutely straight for this to work. But sometimes, such as on web pages, you can make an edit field appear where there was not one before. This pinch gesture was part of the way to select text before IOS 9.
Now, for the way to force an edit field in an email. Pretend to reply to it, and it will be editable. You then can go to the text you wish to select, and do so. Then cancel the reply.
