You will have to manually type the person’s name if in your contacts, or the 
phone number/email address in to the “to” box. The nice thing is, if they 
are in your contacts, you should only have to type part of the name and you 
will find a list of suggestions below the “to” box. Double tap the 
appropriate suggestion and then find the message field and double tap it. At 
this point you can dictate all you wish. I’ve gotten in the habit of not 
deleting my text messages so I can just find a prior conversation and can 
easily message someone.

  One thing you can do is hold the home button the entire time that you wish 
Siri to listen to you, this should eliminate the problems you have with 
pausing. I do agree that using dictation seems easier because you can pause 
and resume dictation using the 2 finger double tap.
