If you have a computer, you might connect each current phone to the computer and make an encrypted backup using iTunes. Be sure you take notes with the time of each backup and which phone is being backed up.
Then when you get the new phones, connect them to the computer and restore from the appropriate backup. The only thing I am not absolutely sure of is whether you can restore from an older backup than the most recent one. I have never had to do that.
