You see a “Null” entry in the messages app if you delete using the rotor, 
visually there is a blank space.
If you close the messages app from the app switcher and then reopen it 
everything is good again.
You can either delete as you are used to doing and then closing Messages in the 
app switcher or delete using the Edit button at the top right in the messages 
app, double tap the message or messages you want to delete to select them and 
then double tap on Delete at the bottom. That also does not mess things up and 
as Gordon already pointed out, this bug is fixed in iOS 11.1 which is currently 
on public beta 3 and I would expect it to be available as the public upgrade in 
2-4 weeks.

In Mail you just have to be careful, once you flick up to put the rotor on 
Delete it stays there so that the next time you double tap after deleting a 
message it will again delete instead of opening the message which should be the 
default.
This was actually changed by Apple to be normal behaviour, but there was a 
pretty big outcry regarding this inconsistent behaviour and Apple so far at 
least has changed it back to what it used to be in iOS 10, I hope this will 
remain this way for the final release and going forward.

Yes that's a bug in the first releases of 11. This will soon be corrected and 
will work the way you would expect it to.
