I haven't had thi shappen even once on my 6S Plus since iOS 11 came out, I ran every beta of iOS 11.1 and also had no issues with this except that in the beta before the public release the Mail app always said 0 unread messages even though I had unread emails, but the next beta which became the public release fixed this for me.
