I would agree that supporting older hardware is a bit of an effort, but there are many examples where companies put the effort into their software to improve performance across the board, including on older hardware. IMHO, this is especially true for Apple, but it's also been the case with Windows, Android and other operating systems. There's a misconception out there that newer operating systems will always run slower on older hardware then the previous operating system did because operating systems are always optimized for newer hardware, but when this is true it's mostly because of a conscious decision by the operating system developer and not because there's a limitation in the software itself. Obviously there are some examples where this isn't true, such as when a company decides to leave 32-bit behind, but for the most part, it's because a company chooses not to spend resources on improving performance and assuming people will get a performance boost just by upgrading hardware. Bottom line is that people shouldn't let a company off the hook because they think this is intrinsic in operating system or software development. Like I said, it's a result of where a company chooses to spend their resources.

I guess we have to agree to disagree on this. I don't think Apple needs to slow 
down older devices running new iOS versions on purpose and if this were so it 
would effect everybody not just a few people.

I had issues with my 6s plus, upgraded to the 7plus no issues here.
Apple makes it's older devices not so well when they upgrade the software. Many 
get lucky and not have these issues. The game of the company is to sell 
devices. People always forget that. Come on you can love apple all you want

That is completely not true, almost every new version of iOS has
actually improved the performance of older devices. I have absolutely
0 issues with speed and responsiveness on my 6S Plus and my wife has a
6S, she is sighted, plays games and all that and she has not noticed any 
slow-down.
My question is what Joe and Paul did to prepare for the update. Did
they make sure to close all apps from the app switcher and as a
minimum reboot their phone (better even to do a Reset Ndetwork
Settings)? Have they tried a Reset Network Settings with all apps
closed since the update? Also, computers and phones are no different,
do slow down a bit over time and I find that after a couple of years a fresh 
start can make all the difference.
I would recommend a Reset Network Settings to see if that helps, if
not then taking a couple of hours to completely restore your iPhone
and set it up as a new phone will probably solve the problem, like I
said, it's a bit of work because you have to put back any media you
may have on the phone, rearrange your apps (very easy now with the
multi-drag ability of iOS 11) and so on, but in the long run well worth it.
Let's also not forget that sometimes we add apps and not all apps are
created equal, some ccan cause problems and starting from scratch and
adding apps back in small groups starting with your most important
ones can help in narrowing down if there is such an app.
