Not anything like what he did on voiceOver-Easy.net.
There's Anna Dresners books, Getting Started with the iPhone.  Plus the Hadley 
iFocus video's.  The videos focus on one small thing at a time.
Of course, all but a couple gestures are the same on iPhones as on iPads.
Shelly Brisbain (not sure on the spelling of her last name) has the book, iOS 
Access For All.
