Settings, General, Accessibility, voiceover, rotor. There you'll see a lot of options such as characters, words, headings, speech rate, etc. To add one of these options to the rotor, you have to double tap on it so that the option says selected and double tap to unselect the same. You can also drag the selected items to arrange how you want the options to show up in the rotor when doing this action.

I can clear all messages by going to Edit and then tapping Clear All at the top left or I can double tap one or more messages in a conversation and then double tap the "Delete 3 messages" in the bottom left where 3 is just an example, it will indicate however many messages you selected. Feel free to use what I typed above to paste into your message to Apple to ask that the Action rotor is one of the nice new iOS 6 features, but to implement it also in these places and others you may think of or where Apple may find a use for it.
