I would agree that Apple Pay would be brilliant if more locations accepted it. 
I suspect by your language that you are somewhere in the UK which seems light 
years ahead of the USA in number of locations accepting Apple Pay and in the 
processing of credit cards in general. I'm always disheartened by the dearth of 
locations which Apple Pay accepts when I run the Pay Finders app from a USA 
location.

You need to set up Apple Pay in the Wallet app.
I use Apple Pay all the time in restaurants and pubs etc.
I rarely need my phisical credit card these days.
I simply double tap home from the lock screen and wallet/apple pay is ready and 
I point the phone to the bank terminal (the device where you insert creadit 
card and enter pind to pay).
A beep is played and VO lets me know that transaction complete.
The bank terminal has to be NFC-enabled to use Apple Pay.
Apple Pay is brilliant!
