Waterlock gets turned on in two ways: 1. You go to control centre on the watch, swipe to waterlock and double tap it 2. You select pool or open water swim as your workout, this will turn on waterlock automatically.

If so turn the digital crown up (away from you if the watch is on your left wrist) and do so a bunch of full turns, not just one half turn or so. However, I do use the workout app. I think you have to be on page one in the app to find the “end” button. When you are in the workout session swipe right to the end of the page where it will say page 2 of three or page three of three. Now swipe up or down until it says page one of three. I think the end button is between new and pause near the top.
