Try turning off wifi assist. This might help keep you connected to wifi without dropping the connection. Wifi assist bounces back and forth between cellular and wifi based on the signal. When wifi assist is turned off, you'll only switch to cellular data when there's no wifi network to connect to in range.

Welcome to the joys of a new phone.

I had to reset all settings, which ends up that you have to re-login to pretty much everything, but that fixed it for me.

You may want to ask Apple Accessibility to do a screen share and run the diagnostics in case you happen to have a bad WiFi antenna in your phone, but that is unlikely.
