There is a range of cycle machines that utilise real bikes and also use iPads 
to allow the riders to cycle virtually with each other  through the app on the 
ipad,

 They have just done this with the Tour de France this year due to covid,

 Very very coold systems but not cheap.

Like anything, just depends on how much you want to spend. 
I've got a Nautilus treadmill which has an iOS app. The app is completely VO 
accessible, but it's only for reviewing workout stats. They also make a line of 
exercise bikes which I'm sure has a similar app set up. If you're looking for 
something where you can control or choose a program from within the app, that, 
I'm not aware of. If there is a bike like that out there, I'd be interested in 
knowing. We've got an old Schwinn recumbent model which works well enough, but 
I'd probably want to go for something similar to the Nautilus where I can at 
least review my numbers.

I've seen them here in NZ for around the 2 grand mark but that was a higher end 
device,

 It really does depend on what it is you are trying to do.

The other thing is you can use a standard bicycle on a cycle erg,  So you can 
get them so you sit the back wheel on the roller and the wheel is locked in to  
place  and use the gearing on the bike to change your resistance levels, And 
there are some which have resistance on the roller as well.

 Or you can get the ergs that you take the front wheel off and lock the forks 
on  to a bracket that holds the front in place while again the back wheel sits 
on a roller  and spins as you pedal.

But yes if you have an apple watch it can give you HR and time etc measurements 
But you can also get caidence / speed computers that cost very little but have 
to be put on the bikes to measue what speed and distances you are cycling.

 I have my own road bike on a cycle erg that the back wheel locks in to and I 
use gears for resistance, I have my apple watch to measure some things and a 
caidance meter to measure speed and RPM from the back wheel,  these are fed 
into an app on my phone which is from a company called wahoo,and that also 
talks to my HR monitor which is again a wahoo device and gives a better reading 
than the watch does,

it really depends on what you wantto spend or do as to what it costs you.

When I cycle I take it pretty seriously, but that's just because it's something 
I've done for years.

Apple's developer kit or interface for such things then good luck, I did not 
find one under $10,000 which means it's really designed for professional gyms.

We bought a spin bike last fall and decided to get just a basic model without 
any connectivity because both my wife and I have Apple Watches which we use 
with the indoor cycle workout to track time, heart rate and calories.
Yes, some bikes keep track of a virtual distance, but who really cares if the 
bike says you biked 6 miles or 10 miles, I am after a good workout and for that 
my heart rate and calories burned are more important. I don't know how much you 
want to spend, but you are better off investing in a good quality bike without 
a fancy controller which may or may not give you what you want, if anything 
spend that money on an Apple Watch which you can use for any type of workout 
not just your bike.
