I can highly recommend any of Anna’s books on iOS. Also, you might have your wife check out Michael Feir’s Personal Power; The iOS Edition. I believe Michael released his guide about a year ago in April of 2020 so it won’t include anything about iOS 14 which came out in September of 2020 but it is an excellent resource written by someone working through the same accessibility issues discussed on this list.
