I'm not sure what I just did, but they just started working with the above settings. Using the defaults, when the watch face is active, I can enable hand gestures with a double clench. A clench is making a fist, so if I do this twice then hand gestures are enabled. To move from item to the next item, I can perform a pinch gesture by just touching my pointer finger to my thumb. A double pinch moves backwards. A clench performs a double tap on whatever has focus and the double clench simulates a press of the crown. I'm still playing with it, and I haven't determined how useful they are yet, but I'm intrigued.
