I am assuming that you are referring to repeat mode, which means when it gets 
to the end of an album or playlist, instead of stopping, it starts over or 
continues playing.
I will use a playlist for an example.

1, Double tap on the playlist that you want to play.
2, Start playing the playlist.
3, While it is playing, just press side button to envoke Siri, and say turn 
repeat on.
Now you can also ask Siri to Shuffle if you also want to do that.

Now you can also turn it on physically, so here are the instructions.
1, Double tap on playlist that you want to play.
2, I do not know how to get to it without starting to play the playlist first, 
so swipe to the play button and double tap play.  You can then double tap  it 
again or do the magic tap to stop it.
3, Go to the bottom of the screen where the taps are and swipe to the left 
until you get to the mini player, keep swiping until you get to album art work, 
then double tap that.
4, This will bring up the mini player to cover the screen.  Now go to the 
bottom of that screen and double tap Playing Next.  This should select it.
5, Now go back to the top of the screen.  there are probably several pages on 
this screen, so swipe up with 3 fingers until you hear page 1, or if you hear a 
bong sound, then that means that you are on page 1.
6, Now just swipe until you get to 3 choices, repeat, shuffle, and auto play. 
Each choice has a toggle switch, so turn on which ever you want.
