My understanding is that this feature was already enabled for FaceTime calls and it is only calls made with the phone app that now have active noice cancelation. I believe it is on by default and that if you want to share music or talk with multiple people in the room you need to disable or change the setting. I have not tried and I am basing my information on the future update from tidbits.com.
