Try going into Settings -> Accessibility -> VoiceOver -> Commands -> Keyboard shortcuts. This will give you all of the keyboard shortcuts available. It'll also let you change the shortcut keys if you'd like.

What are the commands to erase the current and previous word when editing? I'm used to using control backspace from Windows, but am pretty sure that doesn't work on iOS. Incidentally, if anyone has a complete list of all, or the most popular, keyboard commands please do send those along too.
