Shawnese,

That is the more useful of the two answers, and it closes off the easy
explanation for good.

A different date every time means nothing is pulling the view to a fixed
point. No stuck date, no event sitting back there, no saved spot. The app
isn't holding a date. It's failing to settle on one. It comes up somewhere
in your past and where it lands is wherever it happened to land that time.
That's behaviour inside the app as it starts, and it isn't a setting, which
is exactly why your pass through all of them turned up nothing. Stop
looking for something you changed. There's nothing there to find.

Which makes the browser test the whole question now, and it's the one piece
I still don't have. If that same account opens on today in a browser, your
calendar is fine and the fault is that one app on that one phone, and
that's a bug to report rather than a setting to change. If the browser does
it too, the account is in it and that's a different conversation.

Worth knowing either way: the iPhone's own Calendar app will show this same
Google account, same events, nothing to move over. So you aren't stuck with
the app that can't settle. I won't guess you through adding it, somebody
here will give you that part exactly.

When you get a minute at a computer, open that calendar in a browser and
tell me what date it comes up on.

VaShaun
