Hi Annie and Brett, Annie, are you saving as text or as PDF when you export the OCR resukts from Prizmo via the open in command? I was going to suggest using a file manager app, such as Brett's example of using Phone Drive, so you have the option to rename your exported document. You can export directly to Dropbox, but it's more awkward. Also you might be able to use a file managing app to zip compress contents before transfer.
I've usually opened my documents in Voice Dream Reader, but I haven't scanned really large documents. you may be correct that there's a memory buffer size limitation. You could also concatenate text files or use a PDF merge program on your computer. I agree that Prizmo is straight-forward to use, too, with the StandScan Pro.
