Assistive touch will not interfere with voice over. Once you turn it on, a 
small translucent button appears on the upper left corner of the screen. As 
long as you do not touch this button your iPhone will perform as usual. When 
you double tap the Assistive touch menu button, it will bring up a variety of 
options. You will find the volume, lock, and mute controls under the device 
button.
