Well, the way Text Detective works using landscape rather than portrait, you cannot get it to scan an entire page at once.
As for your first scan, before you go to the restaurant, use a printed sheet of paper at home and practice, practice, practice. Otherwise, you will become frustrated and disappointed very quickly at the restaurant as the app does not successfully scan the menu. Practicing will teach you what you need to do beforehand whilst you are not in a stressful situation.
