You can always tell Siri to open the app you want to switch to even if it is already running in the background.

After tapping assistive touch menu, you tap device, then more, then multitasking, and you are in the app switcher. Some on this list have had problems with the assistive touch messing with their other gestures, I have no problems with it. If you want to try it, tell searie to turn on assistive touch. If you end up not liking it, tell searie to turn it off.
