What sort of messages are you referring to: email or iMessage or text? In email, there is a cancel button on the top left of the screen. Then you'll get a confirmation that you want to delete the draft, and you can hit the "delete draft" button. In iMessage, you can simply delete all the text. I'm not sure what to do in the case of a text message, since I have an iPod, but perhaps someone else can chime in.
