It sounds like your confused over using Siri or gestures.  Gestures do not 
require the use of Siri.  Siri can perform many tasks just by asking her.  For 
example, you can ask Siri to  words.  She can do it faster then you could.  You 
could ask her how far is it from New York to Chicago.  Siri is great at that 
kind of thing.

Gestures would be used for example you didn't hear what Siri said when you 
asked her how far is it from New York City to Chicago by flicking 2 fingers up 
from about the center of the screen toward the top.  If you have characters set 
in the rotor for example, you could put your finger on the word Chicago and 
then flick 1 finger down on the word Chicago and hear C H I C A G O every time 
you flicked that finger down.
