Before I exit the mail app, I hit the back button so that the list of accounts is showing. For example, EarthLink, iCloud, VIPP. Voice over will then read the folder choices with the usual 2 finger flick down and announcing the number of messages in each account and all I need to do is to double tap the one I want such as EarthLink for example. Then EarthLink opens with it's list of folders such as inbox and then announces how many messages are there assuming I didn't finish reading them all. Under in box is the other folders out box sent mail etc. HTH

I think it's a major annoyance actually. That last message is
selected, but I don't know how to get it unselected when you close the
mail app. Occasionally mine doesn't open a message but I have no idea
what determines this.
It doesn't make any difference whether it's portrait or landscape as

I don't have an iPad, but if you hold it in portrait mode and are in a
message, won't a scrub gesture take you back to your mailboxes?

I guess you would first have to let us know if you are using the iPad in
landscape or portrait mode. If you use it in landscape mode then as Richard said, you will see both the messages and mailbox list but even here a scrub
gesture should take you from an open message back to the list of messages.

If you hold the iPad in landscape, you will have a split screen with the
message on the right side, and the inbox and back button on the left hand
side.

But if you just prefer portrait mode, the back to inbox button is in the
top
left corner.
