I'm sure I got frustrated with this once, but having fiddled on 2 different 4S's running 7.1.2 and 8.1; and can't reproduce the problem. Whichever way I go back up to the thread or sender list, going back into any has closed the edit field until I double tap it again with a view to replying.
I should try the iPad, I think that might have a different slant on things like this.
