Using the double tap and hold option on your phone to delete an app may run you into the IOS 8 bug where you can't always delete an app in the bottom row of a home page. There are some work arounds for this discussed on this list so you may be able to find more information in the archives.

This is the only way I've ever tried to remove an app from my iPhone, so I can't help with your other issues.

Are you talking about apps? What I described before is as detailed as I
can make it with respect to apps. You talk about "things". Is this

     Hmm, when I go through them on my computer, it doesn't show them
now, but they are still on the phone.  can you tell me exact steps to go
to delete, please, I can't seem to get things off my phone through my
computer even though that's how I got them on there in the first place.

Ok, i have some crap on my phone I want gone, it synced, I don't want it
there plus I have apps I want to remove because I either accidentally
downloaded something I didn't want or it doesn't work so I'd greatly
appreciate aedvice.  I want ot to do this from my Windows computer if
possible.
