Basically, you use the virtual desktop software to automatically move around which windows are on the display that VNC is sending you. Thus you can effectively "flip" between the two displays.
I use this virtual desktop at home, even without two displays. It's pretty nice in its own right, as well as being useful for multi-monitors in VNC.
