just my 2c
shifting a file to the desktop has the advantage of not being
destroyed by accident, there are cases if the plist or other
preference file is destroyed you may have difficulties with the
application thus you then may need to put the old preference file back
in place, serial numbers, key codes are sometime stored in the pref file

Home > Library > Preferences - Move the "com.apple.Safari.plist"
file from the Preferences folder to the Desktop.
Now launch Safari.
Check your Printer's Preview that the Print Settings are what you
wish … A4 - Portrait 100%.
See if Safari prints as it should. If so move the .plist file to
the Trash.
Once Safari prints in Portrait 100%, it should hold that as
Default. Safari holds the last print setting as Default (or should).

Yes, I've done all that.
It still goes back to landscape and 75%.
It only happens in Safari.
That's what has me stumped.
I've thrown out all the printing plists I can find.
