When I setup a pi for a project be it weewx or 'other'. I use the OS 'minibian' Basically raspian with all the gui removed and stripped to the bone. This allows install of just what is needed for the project to run and nothing more. As for backup, just use rsync to send to a server somewhere. rsync has been around since the dawn of time.
