Even though video codecs aren't pluggable on the browser level in Safari, they are pluggable on the QuickTime level. For example, XiphQT enables Ogg/Theora/Vorbis support in QuickTime. Flip4Mac enables WMV support. MPEG-4 support is part of QuickTime itself.
