I haven't checked, but since AbstractTab takes a Model for
the title, you could try just changing the value that model
returns.
e.g.
Model tabLabel = new Model("label1");
... new AbstractTab(tabLabel) {...
... onAjaxUpdate ...
tabLabel.setObject("label2");
...
