As for me, IMHO, I like the OE process, i.e. new response at the top with
the original email below with > (if configured that way.)

I delete what does not apply in the original and if necessary cut & pasted
with the ">" in my response if necessary. Or sometimes state "responses in
original email below." And my signature is <G:
