When one registers a domain name or applies for one, doesn't it "have" to be hosted somewhere?

No, not unless you want to have a website, and even then, you
can get a free website at, say, Yahoo/Geocities, and then use your
registrar's domain forwarding feature to point your domain to it.

Someone said registering via Yahoo and then transferring it to
abc.com or def.com is a real pain.

Transferring a domain's registration is usually unnecessary.

Anyone else have the same experience.  I need/want a new one,
but not sure if I want Yahoo to host it.

Hosting and domain registration are completely separate things. If you want, you can use A as the domain registrar, B as the DNS host,
C as the web host, and D as the domain mail host.
