So yes, ignoring losses in the Ethernet cable (which are NOT inconsiderable at that current draw), it's getting a significant fraction of 12 volts; certainly more than 5.
I have a field station I'm making all inside a pelican. I'd be psyched
to be able to use my 12v battery to power the station. Right now, I'm
using 3 7805 5v regulators to give it power, and it creates both a lot
of heat, and a lot of loss.
It would. You can't connect multiple 78XX regulators together. Each of them tries to regulate the voltage to a slightly different level and they fight each other, generating a lot of heat and ... a lot of loss.
