I haven't tried it yet myself, but my guess is that Witango will much prefer 2003. It may run on 2008 but it will probably need to be manually installed and set to some compatibility mode. Oh, and I'm not sure if the plug-in works in IIS 7, but this could also be a problem area for you.
One thing that I can tell you is that Witango does run fine on 2003 64-bit. As for hardware, a professional license properly uses multiple cores on multiple CPUs. But you need to install multiple servers to get the best efficiency. In one production example I have: 2 CPUs each with 4 2.66Ghz cores (Intel 5x00 platform) 4 Witango services installed each bound to 2 cores Each service supports 50 threads I can process over 5,000 requests per minute on this server. One more mention, stability in Witango comes from staying away from problematic areas, and coding well. For example, one bad @URL call can take down a server regardless of how powerful it is.
